Mushroom and Cashew Stir Fry


  • 500 grms Hokkein noodles
  • 1 tblsp sesame oil
  • 1tblsp extra virgin olive oil
  • 3 cloves garlic crushed
  • 1 small red chilli very finely sliced
  • 6 spring onions sliced
  • 1 red capsicum julienned
  • 2 cups button mushrooms sliced
  • 2 cups broccoli florets
  • 1 cup snow peas sliced
  • 200 grms baby sweet corn halved
  • 2 cups bean sprouts
  • 1 ½ cups roasted cashews
  • 3 tblsps tamari (soy sauce)
  • 2 tsps ginger finely grated



  1. Soak noodles in boiling water 2 mins, drain and set aside.
  2. Heat oils in wok or frypan, add garlic, ginger, chilli and spring onions. Fry 2 mins.
  3. Add capsicum, mushrooms, broccoli, corn and snow peas, cook with a little water until tender over medium/high heat.
  4. Add tamari, bean sprouts, noodles and cashews.
  5. Heat through and serve immediately. (Serves 4)
